Serves 10 people

To make the Clementine Cordial (produces 750ml)

300ml fresh clementine juice
200ml newly squeezed lemon juice
500g caster sugar

For the Drink (yields 850ml, serving 10)

400ml premium vodka
100ml dry gin
150ml peach liqueur
200ml citrus syrup (see above)
Fresh cranberries, to garnish

Method

To prepare the Syrup: Place the listed items in a saucepan, heat until it reaches a gentle boil, stirring to dissolve. After that, turn off the burner and leave to cool down entirely. Decant to a clean bottle, cap it and store in the refrigerator, where it will keep for around a month.

For the Batch Mix: Mix all the spirits and syrup into one large bottle, leave to sit for one hour, then filter it preferably using muslin, to ensure it's fully clarified.

When ready to serve: Pour 85ml from the premix into your mixing glass packed with ice, and stir gently for a minute until cold. Pour into a cold coupe glass or similar, garnish with the cranberries and complete it with a quick spritz with the mandarin essence over the drink.
